Workflow variables in Joget aren't defined in the Forms.
You would need to define the workflow variables in the Process Builder as mentioned in Workflow Variables and use them in your routes' transitions. Then they'll show up in the variables' list on the process definition page.

After this, you can map form fields to these variables (by typing in the variables' names) in your forms.

Not necessarily the workflow designer applet. If you're using v5, you can always use the web-based ProcessBuilder to do almost everything (and this includes creating workflow variables as well). As to your second problem, the workflow designer shouldn't ask for authentication if you're already logged-in in Joget. Even if the session ends, it accepts the same credentials as in Joget. Do you see any errors in the logs when you enter admin/admin as creds and they aren't accepted?

Hover on the name of the process in the ProcessBuilder and you'd see a Properties button pop-up. Click on it and it would open a properties dialog where you can create workflow variables and configure SLAs etc. Also, could you please choose to accept the original answer (if that was okay:)) to help others later?
