In some cases datalist fields shows values and some others show "ID"

Hello, good afternoon
Can you help us with the following issue?
We created several forms to setup some basic data of our customers, then we feed another form with that data to setup our customers address types.
Maybe we are not using correctly the "default options binder" in a selection box field and here is the issue
In some datalist fields we get the value that is what we want (green marked - Readable), but in some other we only get the value ID (Blue, orange, yellow case)
We would like to have the values and no the ID's
Can you support us?
