You can edit the Userview "PR Listing" menu properties and remove the "Form (Add)" selection to remove the "New" button from displaying in your app. Example screenshow below"

I am now trying to have the "Delete" button to show up (on the UI List page), but it is not showing up, where should I look?

Also, I want to change a few form submissions in the workflow from "Complete" to "Next", how do I do that?

I saw your question and this might help you.

In Userview Builder, CRUD properties, just click the "Show Delete Button?" checkbox.

In the same properties screen, to change the button labels, just key in your text in the properties field "Save Button Label".
